HIJINX Ice-cream cake

  • 1 ½ quarts HIJINX ice cream
  • 1 cake mix pack
  • ½ cup dessert sauce
  • 2 cups of mix-ins
  • 8 oz whipped cream

1. Prepare your cake mix using two 8-inch cake pans. Let the finished cakes cool completely. Wrap each layer in plastic wrap and place in the freezer.

2. Line one of your 8-inch cake pans with parchment paper and place the softened HIJINX ice cream in it, spreading to create an even layer. Cover the top of the layer with plastic wrap and re-freeze until set.

3. Combine the ½ cup of dessert sauce with your favorite mix-ins. Place a layer of your cake on a large plate. Spread the sauce and mix-ins over your cake in one even layer. Remove the ice cream layer from the freezer and gently place it on top of the cake.

4. Now, you may optionally add the other cake layer on top of the ice cream. Alternatively, leave it in the freezer for later use.

5. Coat the top and sides of your ice cream cake with whipped cream. If you have any remaining mix-ins, sprinkle them over the cake.

6. Place back in the freezer before serving, until the ice cream is set. Before serving, let the cake sit at room temperature for 10-15 minutes. Enjoy!
