Blackberry Chip

INGREDIENTS

  • HIJINX ice cream mix
  • 1 ½ cups half & half or water*
  • 1 cup blackberries
  • 1 tablespoon sugar
  • 1 teaspoon lemon juice
  • 1 cup chocolate chips
Note: For a lighter version use water. For a creamier version use half & half.

    INSTRUCTIONS

    1. Add blackberries, sugar and lemon juice to a saucepan and heat over medium-high heat, until the berries release juices and begin to simmer, about 5 - 7 minutes. 

    2. Pour the berries through a mesh strainer to remove any seeds. Set aside. Your blackberry purée is ready!

    3. Warm the half & half on stove or in the microwave for 30 - 60 seconds until hot, not boiling. 

    4. Using a blender, combine 1 packet of HIJINX ice cream mix with the half & half and blackberry purée. Blend for one minute or until thoroughly combined.

    5. Let the mixture rest for 30 minutes on your counter.

    6. Transfer to a freezer-safe container with an airtight lid.

    7. After 30 minutes, gently stir in chocolate chips. For better distribution, freeze for 1 - 2 hours before stirring in.

    8. Freeze for 3 - 6 hours. Enjoy!
