Blackberry Chip

INGREDIENTS

  • HIJINX ice cream mix
  • 1 ½ cups whole milk
  • 1 cup blackberries
  • 1 tablespoon sugar
  • 1 teaspoon lemon juice
  • 1 cup chocolate chips

OPTIONAL

  • ½ cup heavy cream

EASY VERSION

1. Add blackberries, sugar and lemon juice to a saucepan and heat over medium-high heat, until the berries release juices and begin to simmer, about 5 - 7 minutes. 

2. Pour the berries through a mesh strainer to remove any seeds. Set aside. Your blackberry purée is ready!

3. Warm milk on stove or in the microwave for 30 - 60 seconds until hot, not boiling. 

4. Using a blender, combine 1 packet of HIJINX ice cream mix with milk and blackberry purée. Blend for one minute or until thoroughly combined.

5. Transfer to a freezer-safe container with an airtight lid.

6. Let the mixture rest for 30 minutes on your counter.

7. After 30 minutes, gently stir in chocolate chips. For better distribution, freeze for 1 - 2 hours before stirring in.

8. Freeze for 3 - 6 hours. Enjoy!

RICHER VERSION

Replace 1 ½ cups of milk with 1 cup whole milk and ½ cup heavy cream.
